If you're seeing a SharePoint Online user with the name "app@sharepoint," that is a built-in Microsoft entry used for automation.

Microsoft shared the following with us regarding the app.sharepoint account:

- Account user@SharePoint is a system account that is used when customer sets up one App
- App is provided with the high level permission to run on the SharePoint site
- Need to check with the user who has created the site or App in the site
